Terre della Baronia - Rosato
Expression of a grape variety, Inzolia Nera, commonly known in our hills as Inzolia Rossa or Rosa, an ancient vine of which very few specimens have survived for centuries in Sicily and which in 2018 was officially entered in the National Register of Vine Varieties. The Inzolia Rosa is also part of that path of valorisation of ancient Sicilian varieties. We started cultivating it over 30 years ago in our experimental fields and it has become the variety of excellence that characterises the creation of Milazzo sparkling and Rosé wines.
"Sicily remains one of Europe's few reservoirs of viticultural variability, in which it is possible to find many grape varieties that had been lost to us, but also the parents and ancestors of varieties currently cultivated in faraway places. Ancient vines not only represent an essential element in promoting originality in the world of wine, but their protection and promotion also represents a concrete action in safeguarding biodiversity and territories historically dedicated to viticulture'.

AGRICULTURE: Certified Organic Scheme
UVE: Selections of an ancient Calabrese biotype, commonly known in the area of
Campobello di Licata as Inzolia Rosa.
AVERAGE VINEYARD AGE: Over 10 years old
SOIL TYPE: Contrada Fondirò, Giuseppina area: calcareous-clayey matrix.
VINEYARD SYSTEM: espalier with guyot pruning
VINES PER HECTARE: 5600
YIELD PER HECTARE: 90 q
HARVESTING TIME: Early September
HARVESTING METHOD: Manual, in 14 kg crates
VINIFICATION: The grapes are crushed and destemmed after a short cold maceration,
to promote colour transfer, they are pressed using a pneumatic press with a closed lung.
After a rapid cold clarification, the musts were racked and fermented at temperature
controlled in steel tanks
MATURATION: In steel tanks. Maturation in bottle.
ALCOHOL: 12.5% Vol.
PAIRING: Ideal with fish and vegetable starters and first courses, fish and meat main courses
white.
SERVING TEMPERATURE: 10 °C
SENSORY NOTES
A candy pink colour. An intense fruitiness emerges on the nose where notes of blackberry and
raspberry mellowed by hints of lychee. Vinous. The palate is fragrant, structured and with an excellent
balance to ensure taste persistence.
