Rose Rose
In this sparkling rosé wine, a modern, lively taste is fused with Sicily's thousand-year history of viticulture. Inzolia Nera, commonly known in our hills as Inzolia Rossa or Rosa, is in fact an ancient grape variety of which very few specimens have survived in Sicily for centuries and which in 2018 was officially entered in the National Register of Vine Varieties. The valorisation of indigenous grape varieties also through the rediscovery of ancient biotypes, experimentation in the vineyard in the selection of clones and extreme care in identifying the most suitable soil, have always been the salient elements of our work as winegrowers. 'L'Inzolia Rosa' is an example of this.

AGRICULTURE: Certified Organic Scheme
UVE: Particular selections of an ancient biotype of Calabrese, commonly known in the area of
Campobello di Licata as Inzolia Rosa.
AVERAGE VINEYARD AGE: 5 to 10 years
SOIL TYPE: Contrada Fondirò, Munti area: black clayey soils, strongly mineral
- Contrada Fondirò, Giuseppina area: calcareous-clayey matrix.
GROWTH SYSTEM: espalier with spurred cordon and guyot pruning
VINES PER HECTARE: 5600
HARVESTING TIME: Early September
HARVESTING METHOD: Manual, in 14 kg crates
VINIFICATION: The grapes are crushed and destemmed after a short cold maceration,
to promote colour transfer, they are pressed using a pneumatic press with a closed lung.
After a rapid cold clarification, the musts were racked and fermented at temperature
controlled in steel tanks
AGEING: In steel tanks. Second fermentation in autoclave (Martinotti method)
ALCOHOL: 12% Vol.
PAIRING: Starters, light first courses, fish and white meat.
SERVING TEMPERATURE: 6-7 °C
SENSORY NOTES
Intense pink colour with garnet reflections reminiscent of pomegranate fruit. On the nose emerges a
intense fl oreal that is complemented by hints of orange blossom and ripe citrus fruit. It is balanced in the mouth,
fresh, savoury and at the same time silky. On the fi nal, fruity notes emerge that can be traced back to the
raspberry.
