HARVEST TIME: Chardonnay: mid-August - Inzolia: mid-September
HARVESTING METHODS: Selection of bunches on the vine and manual harvesting, in 14 kg crates.
VINIFICATION: Blow-pressing with pneumatic presses with closed lungs. Fermentation at
controlled temperature in steel and, to a small extent, in oak barrels.
MATURATION: In steel tanks. Final ageing in bottle.
ALCOHOL: 13% Vol.
PAIRING: Crustaceans, mushrooms and truffles, fish and vegetable starters and main courses
fish and fresh cheeses.

FOCUS: TERRITORIALITY WITH AN INTERNATIONAL FLAVOUR
Since its inception in 1991, Maria Costanza Bianco has been tangible proof of the experience
gained over the years in the cultivation and vinification of Chardonnay as a complement and
exaltation of the Inzolia, an indigenous variety, resulting in a Sicilian wine of surprising longevity
and elegance, something never before achieved by an island wine. The use of forms of cultivation
expanded with appropriate green management, the adoption of vigorous rootstocks in synergy with matrices
marly limestone soil, typical of some of our districts, have bypassed the possible
intrinsic limits of the grape variety deriving from its genetics, bringing out aromatic and taste aspects
never emerged in their chosen territories.
SENSORY NOTES
It has a beautiful straw yellow colour with green reflections. The nose is seductive. In the opening hints
of white flowers combine well with aromatic vegetables, then emerge enveloping notes of flowers and leaves of
citrus fruits. In the mouth it is full and with a nice structure, the sapidity ensures great persistence.
