Grapes: Chardonnay (dominant) - Inzolia
AVERAGE VINEYARD AGE: Over 15 years old
SOIL TYPE: Contrada Fondirò, Munti area: black clayey soils, strongly mineral -
Contrada Ninotta: from white soil with strongly calcareous marl to grey loamy soil
- Contrada Arena Nuovo: white limestone to medium-textured clay.
GROWTH SYSTEM: espalier with spurred cordon and guyot pruning
VINES PER HECTARE: 5600
HARVEST TIME: Chardonnay: first half of August - Inzolia: first half of September.
HARVESTING METHOD: Manual, in 14 kg crates
VINIFICATION: Whole cluster pressing of the grapes. Temperature-controlled fermentation.
Refinement of sparkling wine bases in steel tanks.
MATURATION: The cuvée, with the addition of the liqueur de tirage, was started to froth.
The bottles were placed in the stack where they remained to mature on the lees for a period of not
less than 24 months.
ALCOHOL: 12.5% Vol.
PAIRING: An excellent aperitif, ideal on appetisers, raw fish, oysters, light soups and
fish and white meat dishes.

Terre della Baronia is a unique terroir, with its 6 contrade and around 50 sub-areas. Here the characteristics
hill climates and a particular concentration of morphologically varied soils combine
with the benefits of a typically Mediterranean climate, with mild summers and non-rigid winters, a
constant, light breeze. Thanks also to the specific characteristics of the climate in Campobello di Licata
we achieve full maturity of the chosen selections, capable of preserving freshness
and aromatic vein: a 'Mediterranean' expression that manifests itself through style in the choices of the
method of processing, in the countryside and in the cellar, all aimed at ensuring maximum value
of territorial expression.
SENSORY NOTES
Pale straw yellow colour with green reflections, fine perlage with a refined crown. Intriguing on the nose,
fresh, green citrus scents emerge. Savoury and persistent with ample and fresh mouthfeel.
