Description
La sheep's ricotta cheese is a cottage cheese which is produced from milk sheep according to a traditional procedure. It is a typical product of the Sicily.
Sheep's milk ricotta is on the list of traditional agri-food products of Sicily.
It is a product widely used in the Sicilian cuisineparticularly in desserts.

It is made from sheep's milk whey, sheep's milk, salt, obtained by boiling cheese whey.
As soon as it is produced, it is harvested in containers, once made of wicker (fascedde) or in small containers made of straws and tied with rushes (cavagne). Today, plastic containers are used that simulate those of yesteryear, but are more hygienic.
