RAW MATERIAL: Selection of fine Inzolia marc
FERMENTATION: Alcoholic fermentation takes place under vacuum, in stainless steel vats
temperature-controlled, followed by distillation.
ARTISAN DISTILLATION: Discontinued by cutting off the heads and tails. Distillation
takes place very slowly to allow the volatile components to evaporate properly and
subsequent condensation, in order to enhance the aromas and characteristics of the grape variety used.
Distillation is carried out in a discontinuous plant with eight copper stills with direct steam
to produce a 'raw' grappa at approximately 75° alcohol. The fi nal alcohol content (45°)
will be achieved by subsequent cold cutting and fi nal fi ltration in order to guarantee the
preservation of the aromatic component.
REST: 36 months in steel tanks

The scents on the nose are frank and fragrant and the taste remains pleasantly persistent with a
