GROWTH SYSTEM: espalier with spurred cordon and guyot pruning

HARVESTING TIME: Early September
HARVESTING METHOD: Manual, in 14 kg crates
VINIFICATION: The grapes are crushed and destemmed after a short cold maceration,
to promote colour transfer, they are pressed using a pneumatic press with a closed lung.
After a rapid cold clarification, the musts were racked and fermented at temperature
controlled in steel tanks
AGEING: In steel tanks. Second fermentation in autoclave (Martinotti method)
ALCOHOL: 12.5% Vol.
PAIRING: Starters, light first courses, fish and white meat.
SERVING TEMPERATURE: 6-7 °C
SENSORY NOTES
It has a beautiful garnet red colour with violet reflections. The intense, vertical nose leaves
affi orate notes of unripe red fruit, red citrus and pomegranate that blend perfectly
hints of red flowers and raspberry. The palate is fresh, crisp and rightly tannic.
Young, fresh, fruity. Rosso di Nera is the FRIZZANTE ROSSO
