Due to its high content of fibre, vitamins and minerals, especially potassium and calcium, it is considered a health food, especially for the liver and digestion. The artichoke is a plant belonging to the artichoke family.\u00a0<strong>Asteraceae<\/strong>widespread in the Mediterranean region, the<strong>Italy<\/strong>\u00a0holds the world record for its production.<\/p>\n<h2 class=\"wp-block-heading\">Artichoke varieties<\/h2>\n<p>The\u00a0<strong>artichoke<\/strong>\u00a0is a treasure available on our tables, depending on the varieties grown throughout Italy, for more than eight months of the year,\u00a0<strong>October to June<\/strong>. In general, artichokes can be divided into four groups:\u00a0<strong>violet, romanesque, thorny and Catanese<\/strong>. Among them, some very valuable qualities are Slow Food Presidia, DOP or DOCG or IGP. The largest cultivations are in Liguria, Tuscany, Latium, Apulia, Sardinia and Sicily. In particular the\u00a0<strong>Sicily<\/strong>\u00a0is the\u00a0<strong>first artichoke producer in Italy<\/strong>\u00a0with different\u00a0<strong>violet varieties<\/strong>\u00a0which take their name from the colour of the green foliage fading to violet at the top, and are differentiated according to the collection area:\u00a0<strong>from Syracuse, from Catania, from Niscemi, from Lentini\u00a0<\/strong>and many others. Sicilian artichokes, with the exception of the\u00a0<strong>thorny Palermo<\/strong>, are\u00a0<strong>mostly defenceless<\/strong>i.e. without thorns. These vegetables are very tasty and excellent in a variety of culinary preparations, both cooked and raw. Fantastic\u00a0<strong>barbecued, stuffed with breadcrumbs or fried.<\/strong>\u00a0Worldwide, there are about\u00a0<strong>90 varieties<\/strong>\u00a0of artichokes, differing in shape, presence of thorns and colour.<\/p>\n<h2 class=\"wp-block-heading\">Structure and properties of artichokes<\/h2>\n<p>Artichokes are the inflorescence of the plant\u00a0<em>Cynara scolymus\u00a0<\/em>belonging to the\u00a0<strong>Asteraceae family,<\/strong>\u00a0harvested and consumed as a vegetable. The<strong>\u00a0edible parts<\/strong>\u00a0of the artichoke are the\u00a0<strong>leaf base<\/strong>\u00a0and the\u00a0<strong>bottom of stem<\/strong>which are peeled and stripped of their woody, hard parts. The inner part of the artichoke consists of a series of shield-shaped leaves enclosing the central part, known as the '<strong>heart<\/strong>\"which is the most tender and valuable part. Artichokes have several<strong>\u00a0medicinal properties<\/strong>\u00a0and have been used in folk medicine for centuries. The plant has properties\u00a0<strong>depurative<\/strong>\u00a0e\u00a0<strong>draining<\/strong>beneficial for the\u00a0<strong>liver<\/strong>\u00a0and for the\u00a0<strong>digestion<\/strong>with high power\u00a0<strong>antioxidant<\/strong>. Low in calories, it contains substances called\u00a0<strong>cynarin<\/strong>\u00a0e\u00a0<strong>chlorogenic acid<\/strong>which have beneficial effects on digestion and liver function. Artichoke is also rich in\u00a0<strong>fibres<\/strong>\u00a0and is a good source of\u00a0<strong>potassium<\/strong>\u00a0e\u00a0<strong>football<\/strong>important for bone health and the immune system.
