Le SQUASHED SICILIAN OLIVES or CONDUCTED GREEN OLIVES are a very tasty side dish or appetiser. A typical Sicilian preserve made from green olives, which once crushed, to remove the stone, are seasoned with aromas and flavours, which may vary from country to country. Also known by the dialectal name of 'Alivi cast out' or 'Alivi Cunzati' . This is my, personal, Family recipe, I still prepare them the way my grandmother used to: by crushing each olive with a stone. I season them with vinegar, oil, garlic and mint, pieces of celery and carrots. Some I season with fresh chilli pepper, for a spicy version. Each area of Sicily has its own recipe, which can vary according to the use of different flavourings, for example, some use oregano, parsley, fennel seeds or fresh sweet peppers, cut into pieces. So, you can easily vary the seasonings to suit your taste. Prepare them in quantity because they last a long time and always go down a storm. I recommend serving them as an appetiser, together with cheese, cold meats and other preserves in oil.
